Many travel insurance policies are priced in $500 or $1000 increments.  So the cost of insuring $3191 per person may be the same as insuring $3500 per person.  I would recommend that you insure your trip at the top of the price band for that premium since you would not incur any additional premium.  Any additional prepaid expenses up to the amount insured would be covered and your trip interruption would allow for a higher benefit. Please note that even though you may insure an amount greater than what you paid, you will only be reimbursed for your actual prepaid expenses.
