May I insure just a second "leg" or part of my trip and not the whole trip?

Typically, travel insurance must be purchased for the entire length of your trip.  Some carriers do allow you to purchase for a one way trip.  In addition, some policies require you insure the full prepaid cost of your trip for certain benefits like pre-existing conditions and financial default of a travel supplier.   Always read the policy for full details of eligibility and coverage.
