I have submitted the requested documents multiple times and I am continuing to be told I haven't submitted the proper documents and explanations I have given them everything I have to process the claim.

The claims process required multiple email exchanges and eventually a phone call to resolve the payment amount. Although the resolution was satisfactory in the end, the process was cumbersome and time-consuming.
Initially, the claims processor incorrectly deducted the refund from Via Rail Canada (which we were not claiming) from our other nonrefundable expenses for hotels, tours and flight change fees. Despite several email exchanges, there was no satisfactory explanation from Tin Leg for this calculation. It was only after the phone discussion, that she corrected this (readily) and the correct claim amount was paid to us.
I also found it redundant that Tin Leg wanted credit card statements, in addition to all the invoices provided for the various claimed expenses. This further delayed the claims process.
Finally, it is disappointing that when tours are cancelled, insurance does not cover the cost of the wasted airline ticket to get to the "gateway" or intermediate destination. In our case, we flew from Washington to Winnipeg, but the onward trip to our final destination (Churchill) was cancelled en route. While were able to get payment for hotel and tour expenses in Churchill, we were disappointed to learn that our airfare Washington-Winnipeg-Washington and hotel in Winnipeg were not eligible.
We do not agree with the claims processor's characterization of us getting a "free trip to Winnipeg" if this had been covered by Tin Leg. The bottom line is that our destination was not Winnipeg, but Churchill, and money spent on getting to Winnipeg was a loss, once the Churchill portion of the trip was cancelled.
I had a lost/delayed luggage during one of my flight trips. I called the Custom Service number and they assured me any items I had to purchase were covered. I was to keep all receipts of course.

The process was easy.
The claim process took a while. The insurer kept coming back for more information but it was eventually satisfied with my claim and made the reimbursement.
